Rum, geography and revolution: the construction of rum as an element of identity in Cuba

Abstract

Although the culinary traditions and repertoires of a community, in principle, are only associated with the gathering of food on a plate and in everyday life, it is easy to associate certain mixtures, flavors and ingredients to a particular nation or region. The reality is that the social and cultural interactions that mediate the cooking of a dish are significant in the preparation and service of the same and contribute, definitely, in the construction of identity of communities as broad as countries or regions of the world.
